The way to a Man's Heart

We are still on the subject of commitment but this time through food. Unfortunately, I never take pictures of my food so I have none to share. Instead maybe I'll share a recipe.

Just as a background, I'm Filipino and the hubby is Hispanic, although ever since he's lived in the P.I. for 3 years he's been a Pinoy-wannabe. In fact, he says "Us Asians needs to stick together". And I tell him when did he ever become an Asian. Last time I checked, his parents are Spanish speaking and swears to high heavens that their ancestors are either white Hispanics or Indians. Not a drop of Asian there. But he insists that since I married him and our daughter was born in Manila that makes him an Asian as well. Okay, whatever right?

Now, I've digressed. My point is that he is Hispanic and I took the effort to create my own recipe of Pico de Gallo aka salsa. He seriously loves and thinks that my Pico is uber good. Coming form a Hispanic, I consider that a high compliment. Here's the recipe:

2 large tomatoes (4-5 of the regular tomatoes as we know it in the P.I.), seeded and diced small
1/3 of an onion (if you like more onions go ahead and add more), diced small
1/2 jalapeƱo, minced (optional)
Handful of chopped cilantro
1 lime (or you can use ~ 1 tbsp of concentrated lime juice)
Salt and pepper to taste

Put all ingredients into a bowl. Cut lime in half and squeeze juice out onto the ingredients, Add salt and pepper to taste. Toss everything together. You can add more lime juice if you want it a little tangier. Adjust to your own taste.

This is great on tacos, fajitas burritos or anything you would want to pair it with. Enjoy!

thank you for sharing the recipe and for joining FoodieWednesday! it's funny how your hubby claims to be asian. i have a white american cousin-in-law who is like that, too...claims to be filipino and loves adobo. hahaha! :D
